I made the rockingest fucking beans last night. Now, I'm not generally a fan of beans, but I saw Gen the Guiltless Gourmet make what she calls Cowboy Beans on her show, and Sammie had a bunch of cans of beans when I arrived, so I decided to make them.
Gen's recipe is vegan, but I just substituted real bacon for vegan bacon. They came out really yummy!
I'll put the recipe under the cut for anyone who may want to try them.
Cowboy Beans
1 8oz can Black Beans
1 8oz can Kidney Beans
1 8oz can Garbanzo Beans
1 8oz can White Beans
1/2 cup ketchup
2/3 cup BBQ sauce
1 TBS molasses
1 TBS Louisiana style hot sauce
3 slices vegan bacon, chopped
1/2 onion chopped
1 TBS fresh minced garlic
1 TBS brown sugar
1/2 tsp Salt
Pepper Grinder
Preparation:
Partially drain each can of beans and add to a slow cooker or crockpot. Mix in the remainder of the ingredients. Put on the “high” setting for 4 hours (make sure to read the directions for your particular slow cooker).
Changes I made: We only had red kidney beans, so I just used two 15.5 ounce cans. No molasses, so we used honey. Used steak sauce in place of the hot sauce (they came out with enough of a kick already). Used like six pieces of real bacon 'cause we both like bacon a lot. Put in a tsp of pepper 'cause we have no pepper grinder. I was surprised with how good they came out!
I can see why these are in high demand at Gen's cookouts. My dad would have loved these. :)
